Celery soup

Apium graveolens

Description

Its generic Latin name, Apium, comes from the Celtic apon, water, which refers to its preferred habitat, while graveolens means that it has a strong aroma.

It is usually eaten raw rather than cooked, as celery gives a crunchy touch to salads, especially in the winter months.
